Fajita Rice Bowls

“My husband loves Tex Mex-inspired food, but he’s a very picky eater. I devised this recipe by
combining a couple of recipes that featured his favorite things. It’s perfect for a crisp fall evening.”
n a skillet over medium heat, brown beef with salt and pepper; drain. Place beef in a slow cooker.
In the same skillet, sauté onion and green pepper in marinade for 5 minutes, or until tender. Add to
slow cooker; pour in tomatoes with juice, tomato sauce and broth. Season with more salt and
pepper, if desired. Cover and cook on low setting for 2 to 4 hours, until heated through.
Serve over rice; top with sour cream, cheese, tortilla chips, cilantro or lime wedges, if desired. Serves 2-4
1 lb. ground beef
salt and pepper to taste
1 onion, chopped
1 green pepper, chopped
1/4 to 1/2 c. chipotle-lime marinade
16-oz. can crushed tomatoes | 8-oz. can tomato sauce
1 c. beef broth | cooked rice
Garnish: sour cream, shredded cheese, tortilla chips, cilantro, lime wedges
Prefer not to leave the slow cooker in while you’re away? Simple…put it to work overnight! In the morning, refrigerate food in a fridge container and reheat at supper time.
Cranberry Corned Beef

The cranberry glaze against the fresh parsley is so beautiful. Perfect weekend dinner with guest too!
Trim fat from brisket. Place carrots and onion in a slow cooker; place brisket on top of vegetables.
Sprinkle spice packet over brisket. Combine cranberry sauces and soup mix in a bowl. Spoon over brisket. Cover and cook on high setting for one hour. Reduce heat to low setting and cook for 8 hours. Meanwhile, combine sour cream and horseradish in a small bowl.
Cover and chill until ready to serve. Transfer brisket to a serving platter. Spoon carrots, onion and, if desired, a little cooking liquid around brisket on platter. Serve with sauce. Sprinkle with pepper. Garnish
Serves 6 to 8
4-lb. cured corned beef brisket with spice packet
5 large carrots, peeled and cut into 3-inch pieces
1 onion, cut into 6 wedges
14-oz. can whole-berry cranberry sauce
14-oz. can jellied cranberry sauce
2 1-oz. pkgs. onion soup mix | 1/2 c. sour cream
4 t. prepared horseradish | 1/4 t. pepper
Garnish: fresh parsley, chopped
